I am kinda looking for non-vehicle specific suggestions here as the vehicle in question is not a GM product.
The adjuster slides on the dash heat/AC vents are hard to move back and forth freely. They move but, not easy enough while driving that the whole vent moves. I thought about like, PB Blaster or WD40 but, don't want to smell it on a daily basis. My next thought was to give them a small shot of silicone spray but, am concerned with the chemical reaction with the plastic. Or would it be more appropriate to just rub a bit of White Lithium grease on the affected areas?

If it's cable operated I wonder where the sticking is occurring. It might be the cable but it could be the valve door binding. While not driving can you get a better feel for what's going on? Possibly listen to it to hear if something is catching or getting stuck when you pull the cable.
If I used lubricant I think I would try something which would leave some graphite behind. Some garage door track sprays have a dry lubricant residue. Lock-Ease does as well. If it's the Bowden cable Lock-Ease may even be able to penetrate the tightly wound surrounding over the inner cable.
Edit: One other product which leaves a nice residue which isn't thick is "BOESHIELD T-9 Rust & Corrosion Protection/Inhibitor and Waterproof Lubrication"
