My 86 2.8L V6 engine starts right up and runs fine, but there are times when backing up it will shut-off, but immediately fires right back up and then
runs fine. It only does this once and awhile.
What part, relay or sensor would most likely be the cause of this problem?

make sure your shift linkage is not chaffing any wires.

This engine shut off does not occur every-time I drive the car.Today I made a right- hand turn and in the middle of the turn the motor shut-off,but fired up immediately. On another occasion, I was at idle at a red light and the motor just shut off, but then immediately fired right back up.
Also, while driving at normal speed, sometimes the motor studders and feels like it going to shut off, but then it immediately starts running again like it never happened. It never throws a check engine light or gives off any codes. It is starting to annoy me, but I have no idea what's causing the problem, because the engine starts and runs great. Any other ideas on this matter?
When you say check the transmission for chaffing a wire, are you referring to the linkage located inside the area where the transmission lever is connected to the shifting cable?

any moving parts of the shift linkage should not rub on anything. at this point i would do a wiggle test. start engine, listen to it, methodicaly wiggle wire harnesses and listen for engine mis or stumble. i hope you have at lease 1/2 tank of gas all the time. i would also be looking at all engine related relays and fuses. do not remove them or wiggle them. first touch test them to see if they get hot with the engine running.

Thanks for the information. I also have been having a problem with my fuel tank sending unit. When tank is full it does not go completely to the full mark. When driving the needle jumps all over the place. I just ordered another sending unit from Rockauto. I hope that solves the problem. I am not looking forward to checking the fuel gauge, but that will be my next move, if sender does not solve the problem. I do have another good working fuel gauge. I checked it out today, it works fine.
