First, it is a 2005 Grand Prix. Sorry, I could not find a forum for that.
I have to press the button on the dash to shut the A/C off every time I start the car. Can I make it stay off all the time until I want to turn it on?
and
Is there a way to turn off the daytime lights that come on every time is it started until I want them on?

Does it have automatic climate control?
I believe that if you have a good scan tool, you can access the menu and turn off the daytime running lights.

yes, auto controls. even come on when the floor ducts are selected and the temp is set way above the air temp outside.

The system is designed for the compressor to run all the time and dehumidify the air. There is likely on override button to turn the compressor off if you want only air flow.
My Mercedes works the same way and occasionally I hit the button to turn off the compressor.
