It would depend upon which Fisher and/or Chevrolet plant you're talking about. Convertible bodies were built at six Fisher body plants in 1961 - Cleveland, Framingham, Janesville, Lansing, St Louis and Van Nuys, but convertible bodies built at Cleveland and Lansing were shipped to other Chevrolet plants to be mated to a chassis because they didn't have Chevrolet plants at those locations to complete these cars, thereby meaning that they will have a cowl tag for Cleveland or Lansing but have an associated VIN tag from Chevrolet completion at either Atlanta, Baltimore, Flint or Norwood. The convertible bodies built at Framingham, Janesville, St Louis and Van Nuys were finished at the Chevrolet plant at the same location.
Having said all of the above, I don't think the information that you're looking for is actually known anyway, but I have recorded many 1961 convertibles in my database and the latest one I've recorded was body number 11733 built 3rd week July 61 at Lansing, but I did not record the VIN for this car.
The latest convertible I've recorded from Framingham was body number 14935 built 2nd week July 61, but I did not record the VIN for this car either.
The latest convertible I've recorded from Cleveland was body number 22177 built 5th week June 61 and was shipped to Norwood Chevrolet plant for completion, but again, I did not record the VIN for this car.
If you own a late built 61 convertible, what was it's build date, I'd be interested in recording it for research purposes if you're ok with that.

Your car is the last convertible that I've recorded that was built at Janesville in 1961 (5th week June 61), but there was at least another month of 61 production after this before Janesville started 1962 model production. I estimate that Janesville made about 76 convertibles per week in 61 so the last convertible built at Janesville would have been made in the last week of July and would be around body # 3823 give or take a few. I don't believe that the actual records of yearly production of each model at each plant are known.
