I will be storing my 63 Impala SS convertible for about 6 months in my garage. What do I need to do? For example, do I need to remove the tires to prevent flat spots, fuel additive, etc?

Fuel stablizer + full tank of fuel yes.

Remove tires? No need to do that and whats more can be a bad thing if for some reason you have to move the vehicle in a hurry. Put wood/plywood under stires to prevent flat spotting.

Don't start the vehicle in storage just to run it. That will cause more harm than good. When the engine is running condensation forms and you can never idle it long enough to dissipate that condensation and that can lead to rust inside the engine and exhaust not to mention break down the oil and transmission fluid. It typical takes 30 min of driving to get all fluids (engine, trans, axle) up to normal operating temps.

Mice can be a problem with storage vehicles. They like places lile the heater and seat.
Possible deterrents I found from some RV sites.

Moth balls
Dryer sheets – such as Bounce
Essential oils such as pepermint
Conventional mousetraps

I park my '53 Sport Coupe in the garage about the first week in November until the first week in May every year due to the winter and salt use on roads here. I disconnect the battery and put Bounce sheets in the interior and trunk. That's all. I've had the car since 2014 with no problems storing it this way. I don't think a fuel stabilizer will hurt anything but I don't use it. When I begin driving it the first of May I put a slow charge on the battery and try to get fresh gas in it as soon as possible.

I agree with elcamino. When I park my cars for the winter, I don't start them again till spring.

The older I get, the more dangerous, I am !!!!

LSS,
I would like to add one thing. In addition to the fuel stabilizer (I use Stabil), I put ethanol-free unleaded gas in it. My local Walmart supercenter has it on every pump. I'm sure this is not the only one that has it. Look around where you live. It's the ethanol that ruins things like fuel pump diaphragms and accelerator pumps.
Just a couple more pennies added to this conversation. You can use it or not. It was free.

I have always put about a cup of Seafoam oil in the gastank rather than Stabil. I've never had a problem with the gas standing over the winter. Once I start driving it again in late April, I pour in a bottle of fuel additive to take care of any condensation that may have occurred over the winter.
