I have a 2003 chevy s-10 with a 4cly motor. When I fill up my gas tank, I top it off completely into the neck. The last time I was getting gas, their was a guy at the gas station with a tow truck. He warned me to stop doing that. He said that when you continue to fill the tank past the point that the gas hose shuts off, the fuel pump will have trouble reading how much gas the tank has and can burn up the fuel pump. He said he's seen this happen a bunch of times. Can anyone else here tell me if this is true?

He has no idea what he is talking about
Your gauge float will of maxed out inside the tank before the pump shuts off,so when you add that last bit of gas it doesn't read on the sender

Dont know about this damaging a fuel pump, but it will lead to an evaporative system failure and possibly splashed or spilled gasoline during the process. Lots of info out there, do a quick web search.

I do the same TAT. 1/4 tank is considered empty for me. And yes, you can damage the evap. system by overfilling but not the pump. I usually let the pump click off on it’s own and then add to the nearest dollar.

it will lead to an evaporative system failure
This is almost guaranteed. Keep doing it and you will eventually get a CEL. You'll be able to clear the code and it will keep coming back until you clear the line from the tank to the canister and you may have to replace that canister.

i like to refill at 1/2 tank. another thing to remember is to tighten the cap only 2 clicks. tighter is not better it wears out the ratchet and you will have to buy a new cap.
