First, make a list of ALL the electrical components you want to be operative on the car. From that you should be able to determine how many circuits you will need. Then order a universal harness kit like Painless or EZ Wire with that number of circuits plus a few more just in case you missed something. There are lots of other harness makes, so do some homework before you lay down your money.

Note that these universal kits ARE NOT plug and play. Make sure to get a good quality terminal crimping tool and be prepared to use it a lot.

Yeah I realize they're not Plug and Play I was planning on running all my own with my putting my own relays on fuses and getting my own wire not being all like a harnessed I just need a place that I can do the research I don't know where to look to find up what gauge things need to be and so forth like that

If you have or can get a factory service manual, it will have a wiring diagram that shows the gauge of all wires used in the car.

Chilton's sell paperback repair manuals fore thousands of different cars. I have one for the 62-72 Chevy II's/Nova's; Chilton 5784 is the book number. I has ALL the wiring schematics in it. But, since your car is no longer stock, and has no wiring currently, it would probably be best to go with an aftermarket wiring harness. There are several vendors of those, or you can try wiringharness.com if you want to try DIY.
