1/4" line will be a bit more difficult to bend and route than 3/16" line, but if you'd prefer to use it from pedal to wheel, go ahead. It won't cause any adverse issues.

The larger diameter won't affect pedal travel. It will simply require slightly more brake fluid when initially filled.

It's a closed system. The pipe diameter does not affect the line pressure.

You're likely thinking of the master cylinder and caliper/wheel cylinder piston diameters (and their related areas). The former area affects how much pressure is generated for a given input force, while the latter affects how much force is exerted by a given line pressure.
