A 92-earlier S-10 trans will have the correct pattern to bolt to your stock bellhousing. This will let you keep your stock clutch linkage so no hydraulics will be necessary.

You will need to shorten the input shaft and front bearing retainer or else use a commercial spacer plate. You will also need to replace the clutch disc and drill out the holes in the trans ears to clear your stock 1/2" bolts.

One other hiccup is the speedo drive. Depending on the trans year, it may be set up with an electric speedo drive instead of mechanical. Some of these will have a gear-driven pulse generator and those can be replaced with parts to drive a mechanical speedo. If yours is the later design with a tone wheel and sensor, you will have to run an electric speedo or use an adapter like Cable-X.

Those who choose an automatic transmission want transportation. Those who choose a manual transmission want to drive.
