Howdy All 
I have a 56 Chevy with a 350 SB, with an Edelbrock 3600 installed sense 02/16 mileage 5696 and for the first time I was pulling out from a stop, stepped on the gas and the throttle went to wide open. Lucky there was no one in front of me the brakes barely held till I turned off the engine. I checked the linkage and see no problem is the EFI trying to tell me something?

There is no way the EFI can go to WOT unless the butterflies (linkage) goes to WOT. The IAC can't open the air enough to cause that. Gotta have air.
Check your motor mounts.
