Make sure the factory fans are working correct now they might turn on but when going bad they will drag and not turn as fast also make sure your radiator isn’t plugged up or clogged up with bugs and mud and so on another thing make sure your water hoses are in good shape old ones can collapse and not let the water flow correct even a bad water pump can fool one big times the impeller might not be turning as it should that can happen as well if I were you I would install a mechanical water gauge to know for sure what the temp is and make sure the timing is where it should be meaning the engine timing one last thing make sure the upper radiator hose is lower than the radiator fill cap.
Ok I messed up some persons car is running hot so I just put down some things to check sorry for the mess up.
