I need to do some patch work on fenders, quarters, and other areas. I have a 63 Impala SS. What gauge sheet metal should I use? I have been told 18 or 20 gauge.

18 is what I use on patch petal. The thicker the better in my book.

I use original or thicker allways.
Im in europe, millimeters around here, My frame was 0.1", my rear qarters is 1 mm, i do believe floor is less than 1 mm at some places, i guess streched, then i use 1 mm anyway. Then some rocker parts was 1.5 mm. I try to measure at a not rusted area.
