If you're dumping the fuel injection and going with the standard trans then you have pretty much as simple a situation as you would with a much older truck. About the biggest issue you'll have to fight is changing out the engine mount brackets from V6 to V8 and of course putting a radiator in there that is sufficient for a V8 along with the fan shroud Allan mentioned. Those early V6 trucks often came with a 20" core radiator which is not gonna cut it. That 5 speed isn't a very strong transmission so don't get too happy with the pedal or you'll crack it like an egg.
