the Q jet is one of (if not THE) best carb for the street... this is assuming some ham fisted bugar eating moron hasn't screwed it up. I agree with you 100% on that.
Even with the 3.07 gear... don't expect any real good numbers in the MPG department. 10 - 12 is the average these trucks get. They are actually quite light compaired to todays standards (even compaired to cars) but they have the aerodynamics of a barn door, which is trying to punch a hole in the air. Keep it under 60 and you may get some decent numbers, but no one can do that anymore.
